The sugar content of the sap harvested determines how long and how much sap must be boiled to make a gallon of syrup. The sugar content of sap is typically between 2 and 2.75% meaning that it usually takes 40 gallons of sap to make 1 gallon of syrup.
Maple Salad Dressing
  • ¼ cup Olive oil
  • 3 tbsp. Maple, cider or rice wine vinegar
  • 1 clove garlic
  • ¼ cup maple sugar
Pour a little olive oil in a wooden bowl, rub garlic clove into the bowl. Combine oil and vinegar and mix. Sprinkle maple sugar into mixture and stir together. Place salad goodies and veggies into bowl, add dressing and toss. Grind fresh pepper over salad.
