Maple Facts

Of the 148 species of maple (Acer), globally only four species produce enough sweet sap to be harvested, and typically sap is only harvested from two – the Sugar Maple (Acer saccharum) and Red Maple (Acer rubrum).
Maple Salad Dressing
  • ¼ cup Olive oil
  • 3 tbsp. Maple, cider or rice wine vinegar
  • 1 clove garlic
  • ¼ cup maple sugar
Pour a little olive oil in a wooden bowl, rub garlic clove into the bowl. Combine oil and vinegar and mix. Sprinkle maple sugar into mixture and stir together. Place salad goodies and veggies into bowl, add dressing and toss. Grind fresh pepper over salad.
