Maple Facts

The internal pressure of a sugar maple may be as much as 20 pounds per square inch on a warm day after a freezing night – the pressure is triggered by the thermal shock. It is the extent to which this pressure exists that determines how well sap will run.

After a snowstorm on Wednesday left us with more than a foot of snow, temperatures have warmed and the sap is running.  Last night the temperatures didn't go below freezing and as a result we have a "flood" of sap this morning.  The first run is always exciting, and especially so for us this season.  Over the past year we've made major infrastructure improvements including additional sap storage and reverse osmosis capacity.  These changes should allow us to make more syrup, but right now it means extra preparations for the first boil.
