We occasionally get inquiries about mold in maple syrup and what folks should do. Usually we recommend they warm the syrup, skim of the offending mold, and re bottle the remaining syrup in a clean container, however, if you're a mycologist at Cornell University the response seems a bit different. Apparently you pack it up, take it to the lab, put it under the microscope, and report your findings. At least that's what Kathie Hodge did when she found mold in her maple syrup. With a trip to the lab she was able to identify the mold as Wallemia sebi. which she describes in her post to Cornell's Mushroom blog as "a distinctly weird mold" that is distantly related to other xerophilic molds Aspergillus and Penicillium
