With town meeting day come and gone we're thinking sugaring. We're anxiously watching the weather forecast - warm days, cool nights - that's the weather we need. The changes in temperature are what trigger the trees sap flow. In the last week or so we've been fortunate, we've had the right weather. The sap has run. We've made our first syrup of the season. It's some delicous tasting fancy. It's finally starting to feel a little bit like spring.
Over the past several months we've been busy working in the woods. We finished tapping in the middle of February. Getting around was a challenge. The snow's deep. Since we've finished tapping we've been in the woods nearly every day making sure the system of tubing is free of leaks, so we don't lose any precious sap.
