Until last year Steve, who's worked with us for more than 30 years, would say, "you never have two good years in a row." Now, after two good year's in a row he's taken to saying, "no two seasons are a like." Surely, this season was unlike any other. With a late start and a cold spell no one could have predicted this season's end - an average to above average crop. A month ago such results seemed unlikely, but with a few extra days of good sugaring weather that's what it's turned out to be.
From the Farm, April 26th: Today was the last day. We started pulling taps. The pumps are off. The tanks are clean. The pans are soaking. The ROs are rinsed. We had a great year finishings with a little more than five pounds of syrup per tap. This sets another record for the amount of syrup made at the farm. So, now we change our focus to cleaning up, forestry work and getting ready for the next year as far away as it seems. ~Ira
